Young barley crepes with rice flakes carob cream and berries ( oil free )

The best vegan crepes with flax seeds, o i l  f r e e!

It took me long time to find right recipe for crepes. First oil free pancakes, which I have done was Julieanna’s Hever with berries. I have changed thier name from crepes to pancakes. They are not crepes, they look like pancakes! However todays ones are hundredpercent crepes. I found this recipe in „The China Study Cook Book” Leanne Campbell. Before I found it I was trying out oat meal and oil. It was tasty and it has really good texture. Nevertheless I wanted oil free crepes, which has good texture. I achieved it. I wrote on the bottom that it is very important to uplift the batter from the sides to the center as soon as you put batter on the pan.




( around 5 – 6 crepes )


1 cup wheat flour ( type 450 )

1 1 / 2 cup plant milk

1 cup water

2 tbsp grounded flax seeds

1 tbsp carob, young barley or spirulina ( optional )

pinch of baking soda


rice flakes carob cream:


1 / 2 cup of rice flakes

1 cup soy milk

1 tbsp carob




rice flakes carob cream:

1. Toss rice flakes in pot, pour it with milk, bring to boil and boil 5 minutes. Remove from the heath and set aside for 15 – 20 minutes. Than blend it with carob.


1. In small pot place flour, flax seeds, baking soda and young barley ( optional ). Stir it evenly, than add milk and mix it  well with scutcher.

2. Heat non – stick pan for crepes and pour the batter. One ladle for one crepe. Move the pan to spread the batter on it. Fry it on very low heat. Important: Keep eye on the crepe. As soon as it become little bit brown on sides gently uplift it from sides to the center. If I do not do it, later it will be difficult to change side. Fry both sides. If batter in the pot become thick, add a bit more milk or water.

serve with fresh fruits ( blueberries or banana ), riceflakes carob cream, home made nutella, carobella or pudding sauce.
